Getting Back to It for the Weekend List

We have progress with the new pet beds, Leela is figuring them out.

She pouted yesterday when the cat was in her favorite bed and finally climbed into her new cozy cave. There might be hope after all!

Happy Sunday, hope everyone is having a great weekend. I’m getting ready to head out on a long run outside, hope my respiratory system is recovered enough from being sick and ready for it. We’ll see! It was a quiet day yesterday catching up on boring stuff at home after a busy week and eats this week have been pretty basic like this veggie stew and baked acorn squash.

Simple oil free tempeh stir fry with purple carrots, tamari, and sriracha.

Another oil free tempeh stir fry with Brussells sprouts and broccoli.

Protein spaghetti with Explore Asian’s Organic Soybean Spaghetti and Trader Joe’s Organic Mushroom Marinara Sauce.

I did experiment more with Follow Your Heart’s VeganEgg mixing a serving with salt, pepper, paprika, and a simple veggie blend.

For a simple and light lunch that was tasty.

The texture held the veggies together nicely with a savory flavor blended through.

I also had lunch at Pho Vegan Asian Cuisine which is becoming one of my favorite places. The atmosphere is quiet and relaxing, perfect to get away from the office for a little break.

I tried the mock lemon vegan chicken with veggies and rice.

Very filling and hearty for the price.

We also stepped out to Orchid Thai where they have a huge new vegetarian/vegan menu.

And plenty of veggie loaded tofu dishes like this spicy cashew nut stir fry that was delicious!

And I’m looking forward to getting back to it this week logging more running miles and getting more creative in the kitchen after being shut down for a bit with the flu! It has been a great week for vegan news!

There is a new plant-based Medical Center in Washington, D.C. focusing on treating patients with diet and lifestyle!

2016 is already shaping up to be a big year for the plant-based lifestyle.

    I absolutely love your broccoli and Brussel Sprout stir fry! I still have to buy tempeh. I confess, I’m not even sure how to buy or where to buy! Anyhow, love the new pet beds. Our dogs are never a fan of new beds or when I have to throw them in the washing machine because those don’t smell quite right to them. Silly dogs.

      Thanks, I love throwing together simple stir fries and I’ve been getting tempeh from Trader Joe’s, best price for the organic stuff.

      So true, dogs can be so picky about beds!

    Thai and Mexican food, I could eat them everyday. My little dogs could use a bed like that today. It was -2 when we woke up this morning. Yuk!

      Me too and so many great vegan options there too! Wow, that is cold! My dogs would refuse to go outside in that!

    I am intrigued by the vegan egg replacer… I just recently discovered cashew cheese, and I am ADDICTED. I sometimes think I am becoming a closet vegetarian / vegan lol. The more I clean up my diet, and the more I pursue a whole foods diet that makes me feel great, the more I find myself eating raw and vegan as my ideal meal. – http://www.domesticgeekgirl.com

      I’ve been having fun with it and the recipe possibilities it offers, next I want to try using it in vegan french toast! Oh yes, there are amazing options in vegan cheese now! I was just marveling at all the options at Whole Foods now, seems like we get more and more every year which is awesome.

    Leela’s bed really does look so cozy, I would totally curl up inside there too!

    I know you mentioned that soybean spaghetti before and now I’m truly intrigued. I’ll have to hunt it down and taste it for myself.

      Doesn’t it? I thought they’d love those beds since they’re always burrowing into blankets. But they’re still getting used to them and prefer blankets! :-)

      It’s a fun, high protein pasta option that I’ve been getting from Amazon. But you can find it at local places too, I got it from Republic of V in Berkeley also.

    Your pups are too cute in their new beds. I’d like to get one of those for mine but I bet they wouldn’t figure it out lol.

    I’m surprised to see Bear Grylls being mostly plant-based. I sometimes watch the show but always fast forward through him killing/eating any poor little animal. I hope he stops that part of it. The other parts of his adventures are very interesting.

      It’s taking mine awhile to figure out and get used to the new beds, lol!

      Agreed on Bear Grylls, terrible to watch those parts and I find myself wondering how he could live off of plant foods or just pack a few extra protein bars! :-)
