Hello from somewhere along the Canadian west coast! We’re on the Vegan Alaskan Vacation at Sea 2015 and this was our view as we pulled out of Seattle!
Things were a whirlwind to get here, but very worth it. I will be posting tons more photos, food, and information from the cruise soon, but not right away since the satellite internet is slooooooow! The food has been amazing so far and there will be a ton of pics!
I’m still working up my distance running and had a good 11-mile run last Sunday.
I’m breaking in a pair of Brooks Glycerin 13s nicely finally. I was a little iffy about the toe box area, but that’s feeling much better after a few long runs. I did a tapered 6-mile run on a treadmill this morning in the ship’s gym and that was interesting while the boat was rocking, quite and adjustment and workout! The gym overlooks the front of the ship and the treadmills face the water, so watching ocean waves and whales made the miles fly by!
Last week was crazy at work trying to wrap everything up for vacation. But this lovely lunch salad I had with my mom was perfect with hummus dressing and tortilla strips.
And I kept things simple in the kitchen while packing and planning with oil free stir fries like this broccoli edamame dinner.
I had planned to make huge smoothies for us before we rushed out for the airport yesterday morning, but that did not happen by the time we got everything packed and dogs ready, so we had simple oatmeal bowls from a fresh, salad place in the food court before our flight to Seattle.
Simple, but enjoyable since I rarely make steel cut oatmeal at home.
Our flight to Seattle was on a smaller plane which worked out great for us getting the seats behind first class and having extra leg room. And you can tell we were kind of half awake.
It was nice seeing clouds and greenery as we came in for a landing, so different from how hot and dry the Sacramento valley is now.
And I like the Seattle airport! Live musicians playing, great shops, and beautiful architecture.
By the time we got onto the ship, it was late afternoon and we had not had lunch yet and saw our dinner in the dining room was not scheduled until 8pm. So we split a Vega One Chocolate Coconut Cashew bar in our room while waiting to complete the safety drill.
It was actually good, a sweet crunchy coconut bar with a chocolate coating and more like a sweet treat than a protein bar. It held us until we hit the salad bar on the lido deck for a late, light salad lunch and I will have those pics coming soon. So far the cruise has been awesome, we just got back from a chocolate demonstration by Fran Costigan, had lunch with Miyoko Schinner and will be enjoying her demonstration later, hanging out with The Vegan Zombie guys, and more! For now the list!

It has been really great so fat and they’re planning another one next year! The vegan group has been getting all of our meals in the fancy dining room plus tons of options on the lido deck.
