Fiery Ginger Dressing

July 2, 2015 by christine

Poor Leela, she has an irrational phobia of house flies, hates them. She turns into a nervous, shaking wreck whenever one gets in the house. So much so that she’s willing to cuddle up with Miko in their kennel safe spot to hide from them.

Not Miko, he’s won’t stop until he catches them and spits them back out. And I won’t stop with the refreshing salads this week because it’s hot here! I’m kind of a ginger fan, I go through a lot of the fresh stuff in blender dressings and smoothies. This is a creamier spin off of an Asian ginger dressing with more flare and no oil or sugar. It has a powerful savory garlic punch that brings a salad to life.

Fiery Ginger Dressing

  • 2 carrots, chopped
  • 1/4 cup shelled hemp seeds (or sunflower seeds)
  • 1 clove of raw garlic
  • 1 tbsp. white miso paste
  • 1 inch thick chunk of raw ginger
  • 2 tbsp. tamari
  • 1/4 tsp. pepper
  • 1/2 cup of water

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings, about 1 cup.

The hemp seeds add a creamier texture compared to just blending carrots.

It coated a loaded spinach salad with vibrant color and powerful ginger flavor.

Great for a meal salad and light enough for a side salad, it adds a warming flavor to a cool summer meal.

Agreed on ginger, one of my faves that I’m hoping to add to our garden soon. :-)

Thanks, true on oil and sugar, they’re just not needed for a great blender dressing! :-)

Awwwww poor Leela! We have found that Cricket doesn’t like the sound that our AppleTV makes when we search for something on Hulu or Netflix…lol…

The dressing looks great! I will be doing a lot of salads for the next month or so – mostly because I jut don’t feel like eating other things it seems

BTW…major contests on my blog all this week! Check them out!

Too funny on Cricket, Leela does not like surround sound explosions and hates fireworks.

Thanks on the dressing and can’t wait to check out the contests!

Suzie and Sammy didn’t like fireworks either. I don’t blame them! They can be LOUD that is for sure!
