Making Broccoli A Decadent Dressing Again

Hello from Austin! We arrived today for Vida Vegan Con, my first one and sadly the last one of these conferences so I’m glad to be attending! I will have a ton of posts and pics coming soon when we have faster wifi. Before we left, I was getting the pouty look from Miko because he managed to rip a huge hole in his snowman toy and he knew I was trying to take it away so he wouldn’t swallow any of the stuffing.

It’s been stashed away until I can decide if it can be repaired and washed, ick!

I have been focusing on salads and healthier recipes knowing we’ll be splurging in Austin with rich vegan eating. And I had broccoli to use up before we left, so this is a simple, smokey broccoli-based dressing recipe that gets it’s creamy texture from nutritional yeast and a kicky flare from turmeric and mustard.

Creamy Cheesy Broccoli Dressing

  • 1/2 cup chopped broccoli
  • 1/4 cup nutritional yeast
  • 1 tsp. Dijon mustard
  • 1/4 tsp. turmeric
  • 1 tbsp. miso paste
  • 1/2 cup water

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.

The color is a beautifully vibrant green.

It coated a romaine salad with apple and tofu chunks to make it a meal salad.

And added a cheesy and savory smokiness to it with a creamy and smooth texture.

Not a bad way to enjoy raw broccoli!

    Your creamy cheesy dressing looks fantastic, I wouldn’t have thought of it myself, but that’s the point of reading food blogs =) I love anything with broccoli in it. Can’t get enough of it.

    Yum I love broccoli, it’s soo healthy! I’m vegetarian and contemplating becoming vegan. :)

      I know on VVC, I finally make it to one and it’s the last one – boo! But there seems to be a motivated group of vegans looking to create a similar event soon!
