Why Balsamic is Better Sweet

I finally watched Fat, Sick & Nearly Dead 2 on Netflix this week and I was very impressed with it. The juicing healthy turn around method Joe Cross promotes isn’t necessarily my style, but it’s an extreme way to make a 180 in diet and lifestyle that works for people facing health challenges. And it has a lot of inspirational stories from people facing challenges like a toddler with arthritis and many getting off medications. Plus it has cute animated cartoons which are always great.

For a simple, healthy meal I threw together a oil-free saute this week using slow cooked cannellini beans, Trader Joe’s organic marinara sauce, shaved Brussels sprouts, carrots, and chopped celery for a fast dinner.

I tossed in added crushed garlic and sliced basil and it came out great, savory, hearty, filling, and very fast to whip up – perfect one pot weeknight meal.

Salads are also great fast weeknight whole foods dinner and I added more slow cooked cannellini beans to this one to make it a meal salad. But the dressing is what made this salad really special because it’s creamy, sweet, savory, and has a satisfying tangy balsamic flavor.

Sweet Balsamic Dressing

  • 1 avocado, seeded and scooped
  • 1/4 cup balsamic vinegar
  • 1/4 cup raisins
  • 1 clove of garlic
  • 1/2 cup water
  • salt and pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.

It’s thick, creamy, and awesome for salad coating.

We have a new kitchen tradition of sharing kale stems with Miko while making salads, he loves chewing on them.

I added chopped apple to the salad and thoroughly enjoyed it. It was savory while being refreshing and slightly sweet.

    You’ve adorable dogs, they look so comfy and lovely! I haven’t seen the Netflix film, but I’m dying to get my Netflix back when I return from my travels. What a tasty dressing…looks delicious!

      Thanks on the dogs, they’re sweet! :-) And on the dressing, I love creating veggie based whole foods dressings.
