Weekend List

It’s been a quiet weekend here which is great after a busy week. I’ve been breaking in my new Brooks Glycerin 12s at the gym and for running, so far so good!

I like that I didn’t have to go up in sizing in them for running like I did with the Nike Lunarglides, Brooks running shoes seem to be designed to give more room in the toe box without feeling too chunky or bulky. A pro for me! And even though the pink and black color wasn’t my first choice, it’s really grown on me for being sleeker looking and matching more of my workout running gear. And not showing dirt.

Hubby has been studying for an IT exam next week and Miko has been trying to be helpful.

And a little frustrated he hasn’t been toy throwing much.

I am having a use-it-up weekend in the kitchen. I need to go grocery shopping for some fresh ingredients, but have been putting it off to use up items in the pantry and freezer. I came up with an interesting salad for lunch yesterday of carrot ribbons, chopped bell pepper, and chopped radish that I found in the back of the fridge and needed to get to!

For the dressing I mixed 2 tbsp. of tahini, balsamic vinegar, tamari, and garlic power which ended up being very tasty!

Dinner was interesting and fun too. Awhile back I ordered a 6-pack of Explore Asian’s Organic Soybean Spaghetti from Amazon.

This spaghetti has two ingredients – organic soybeans and water. That’s it. And it has only 181 calories per serving, less than traditional pasta, while packing a lot of protein and fiber. 23 grams of protein and 11 grams of fiber per serving is awesome! It also cooks fast, 7-8 minutes in boiling water. I mixed it with Trader Joe’s vegan marinara sauce and chopped broccoli and onion for a simple one-pot meal.

The texture is not like traditional pasta, it’s more chewy and “meaty”. But still delicious and my current favorite pasta alternative.

This news article on diet and colon cancer research has been big this week, but a little confused of the definition of vegetarian.
