How Banana Makes A Salad Decadent

Hooray for the weekend almost being here. Leela and Miko agree, they’d like more walks and play time.

And more carrots, they both come running into the kitchen now when I’m chopping carrots for a salad. Keeping a little container of chopped carrot “coins” in the fridge have been great, healthy, and inexpensive treats for them. Good thing organic carrots are cheap in bulk here because we go through a lot of them in salads, smoothies, and treats. And I go through a lot of bananas too, they are the perfect sweet and creamy alternative in sauces and dressings to sugar, syrup and cream. A simple banana can add a sweet and creamy texture to a blender sauce better than sugar and dairy because it’s lighter and packs more nutritional value.

A banana added a sweet and creamy richness to this Dijon dressing and a fun tangy kick to a kale salad.

Sweet Dijon Banana Dressing

  • 1 banana, peeled and chopped
  • 1/4 cup hemp seeds
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. Dijon Mustard
  • 1 1/2 tsp. cumin
  • 1/4 cup water
  • salt and pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.

The texture is perfect for a creamy dressing, silky, thick, and smooth.

    More walks sounds like a wonderful idea. Perhaps Chicago will see above 30 degree temperatures soon so my dogs can get some long walk in. Ugh!

    I’ve yet to try the other banana dressing recipe you posted a while back. I have some perfectly ripe bananas in my kitchen right now, so I’m going to bookmark this and make it this weekend. :)

      I hope the weather is better for you now! It’s in the 80s here which is nice, but scary since that’s way too hot for this time of year!

    but can u taste the banana? i find i can’t food combine sweet fruit with fat!

      You can, but it makes a nice sweet and salty flavor blend.
