Mint Cocoa Smoothie & Summer Dressing

Happy, relaxing weekend! Well maybe not for Leela.

She’s pouting about Smokey discovering her favorite bed by the fireplace and hogging it.

I’ve been enjoying decadent chocolate mint smoothies the last few days thanks to NuNaturals NuStevia Cocoa Mint Syrup.

I should probably be coming up with creative recipes to use the syrup in, but it’s such a delicious product by itself and adds a sweet chocolaty minty zing to smoothies with just a spoonful or two. And for such a tasty product, it only has a list of 5 simple ingredients and no sugar or empty carbs.

A little goes a long way in large smoothies, this one has Garden of Life’s Raw Protein powder, a spoonful of Vitamineral Green Powder, frozen banana, carrots, and kale with the cocoa mint syrup.

But still tasted like a chocolaty treat. Looking forward to using the cocoa mint syrup in more recipes this week, maybe almond milk coffee creamer and banana soft serve ice “cream”, mmmmm.

I’ve also been enjoying more salads this weekend, of course, and this one with my first batch of home grown sprouts for 2015! I created this avocado dressing for a fun, summery celebration in the middle of winter with bright ginger and dill flavors.

Gingery Dill Dressing

  • 1 avocado, seeded and scooped
  • 1″ thick chunk of fresh ginger
  • 1 clove of garlic
  • 2 tbsp. of lemon juice
  • 1 tbsp. dill weed
  • 1/2 cup water, as needed
  • salt and pepper to taste

Place all ingredients into a blender and blend to a smooth and creamy texture. Makes 4 services.

The texture is super thick, creamy, and decadent.

Yet no worries about coating an entire salad in it since it’s loaded with healthy avocado fat and good stuff!

The flavor is perfect for a summer reminder, creamy, bright, and has a fun zing.

    Yum, I love the idea of a chocolate mint smoothie. I have to get flavored Stevia, I’ve been meaning to but keep forgetting. Thanks for the inspiration and motivation!
