Cauliflower Alfredo Dressing

Wow, tomorrow is Christmas Eve! Ready? I think I am, but I’m noticing more stress this year with a crazier work schedule around Christmas. Even Smokey is looking a little more stressed and she just hangs around the house.

Miko is not happy with me for not making enough time to play with him.

He’s pouting at my feet now, poor guy. I usually love Christmas and all the festivities around it, but with so much going on at work and trying to get ready around it and being on call, I’m feeling ready for it to be over too. How sad is that? Note to self, request the entire week of Christmas off for next year now! Or schedule a mini vacation in January …. hmmmm.

Still trying to eat healthy at home around the holiday splurge eating and one ingredient I have a tough time working with raw is cauliflower.

It’s tough and tough on the digestive system! But turns out it’s nice and creamy blended with hemp seeds in a creamy “Alfredo” sauce.

I gambled with this recipe trying to create a veggie-based Alfredo sauce, obviously the texture of pureed cauliflower isn’t gonna be exactly like loads of cheese and cream. But this version is pretty impressive for a raw-vegan version that got a much needed health makeover.

Cauliflower Alfredo Dressing

  • 1/2 cup shelled hemp seeds (or sunflower seeds)
  • 1/2 cup chopped cauliflower
  • 1 clove of garlic
  • 2 tbsp. apple cider vinegar
  • 1 tsp. onion powder
  • 1/8 tsp. black pepper
  • 1 tsp. dried basil
  • 3 tbsp. nutritional yeast
  • 1/2 cup water
  • 1/2 tsp. salt

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.

The texture is surprisingly creamy and rich with a tangy and savory herb flavor.

It coats a spinach salad nicely and would also be great on spiral sliced zucchini.

So keep it as healthy as possible during this season of high stress and indulgent eating with this decadent and healthy dressing.

    Well I think that recipe looks and sounds perfect! Great close up on Smokey! Chi’s are funny about not getting attention! LOL Poor Miko! I hope you don’t get bugged on call too much tomorrow! Merry Christmas!

    I think maybe my last comment on this post went to spam. Just wanted to say LOVE the furkids pics and the dressing sounds wonderful! I need to get into more dressings and soups in January! I was thinking about doing a few days or a week or mostly liquids – blended soups included – OR a Salad Week!!!!
