Ginger Orange Dressing

So happy the weekend is finally here! And we might get some much needed rain today, it’s overcast and breezy outside. Perfect weather for staying at home and tackling a long list of cleaning and other projects. One of these days I will successfully capture a video of Skipper’s happy dance because he does the cutest little butt shake. Until then, here’s a cute photo of hubby playing with him since he’s been very energetic lately.

I have to give a shout out to Baagan, one of my favorite places to eat, because they made One Green Planet’s list of 8 Healthiest Vegan Restaurants in the U.S. How cool is that? I’m so happy for them and hubby and I really enjoyed lunch there this week for a creative new dish – vegan bean and sun dried tomato “meat” balls with spaghetti squash.

Hubby said it best, it was a salad in the form of a comfort food and delicious!

Last week at Trader Joe’s, I bought a big package of romaine lettuce for hubby to use. Well, he used a couple of leaves for a vegan burger and I had to do something with the rest fast before it went bad. We ran it through the slicer blade on our food processor to chop it up into a shreds and condense it down for a huge salad and I really liked the texture.

So much so that we ran carrots, peppers, and leeks through the blade to complete the salad and it was much quicker than me chopping it manually and made a smaller, bite-sized salad that was less messy to eat. And a great excuse to try a new dressing recipe I wrote for NuNaturals Pure Liquid Orange NuStevia.

Ginger Orange Dressing

  • 2 carrots, chopped
  • 1/4 cup almonds
  • 2 tbsp. white miso paste
  • 1″ thick chunk of fresh ginger
  • 2 tbsp. of rice vinegar
  • 6 drops of orange stevia
  • 1/2 cup of water, as needed

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.

The dressing is a beautifully vibrant orange color and very thick and creamy.

And perfect for coating a large bowl of shredded romaine lettuce.

Romaine can have such a mild flavor, but it was wonderful paired with shredded leeks and this kicky ginger dressing with an orange pop. With the NuNaturals Orange NuStevia, a little bit goes a long way with the orange flavor, it’s a powerful sweetened flavor extract that really made this dressing pop.
