Simple Saturday

Happy Saturday, finally. We’re still dogsitting my dad’s dog.

And Miko is having a blast with his new stuffed pig toy.

We picked it up for him yesterday since he ripped into his last toy and he eagerly watched me cut the tags off of it. Then he took off with it and has been keeping it near since.

I took off to the gym this morning to meet my mom and sister for an extended workout starting with 4-miles on a treadmill as I start up half marathon training again. After, I made a simple, hydrating tomato salad to go with lunch.

A fast blend of chopped tomatoes, chopped red bell pepper, fresh basil, hemp seeds, balsamic vinegar, and Trader Joe’s Vegan Mozzarella Sheds. The flavors blended nicely.

Later hubby and I took off on some errands dropping off more stuff to donate, Sports Authority for more running bras which aren’t cheap – ugh! And finally Whole Foods for a few goodies where we stumbled across a Tesla test drive demonstration event for the Model S! What a sexy car, right?

I was just giddy when we were encouraged to get in and tinker with the car – the gauge and center displays are gorgeous!

I was tempted to test drive it, very tempted. But I’m a little scared to drive a huge car worth that much money honestly. Plus it’s not something I could consider buying and did not want to get spoiled by the driving experience. But the technology in this car is beyond cool and it’s just fascinating to see where the market trends are going and hoping that Tesla is showing a huge market for long-range electric vehicles.

I’m a huge electric vehicle fan and have been an EV driver for the last 6 months since leasing the Fit EV, more in my price range. :-) And I love the driving experience of my car, it’s very quiet, smooth, and accelerates better than any gas car I’ve ever driven with tons of torque and no fuel-injection delay. And that’s fun when I need merge into traffic quick. Adjusting to the range and how driving habits affect it has also been kind of a fun game for me with a short commute. Who knows what will be available from Tesla when my lease is up, but I’m keeping my fingers crossed there will be something more in my price range.

I kept things simple for dinner tonight since I needed to use up a big pile of fresh chard.

I chopped it up and threw it into a wok with a little sesame oil.

And added this package of Gardein Mandarin Orange Crispy Chick’n.

The included sauce packet coated the chard nicely, but I added a little tamari and red pepper flakes for a flare.

It was a simple and delicious dinner. Can’t say if the Gardein was exactly like chicken, but the thin slices of Gardein had a nicely chewy and hearty texture.

    This looks good, I have a lot of chard in my garden to use up as well. And very interesting on the cars, I have a Honda Civic hybrid but really want my next car to be all electric.
    We were hiking today on a nice uphill trail and saw a chihuahua charging the trail! I was surprised at his/her hiking prowess and thought of your Miko and Leela.

      I’m not a huge fan of raw chard unless in smoothies, so I’ve been stir frying or steaming it lately. Nice on the Civic Hybrid! And so cute on the hiking chihuahua, I’ve taken mine a few times and they actually do really good!
