Finally the weekend is here, for a 4-day work week – it felt a lot longer. Actually the busy days flew by, but I felt like mush at the end of them with so many projects going on at my job currently. My sweet hubby made me this cute Grumpy Cat 3D paper meme to cheer me up.
I adore Grumpy Cat and probably gonna have endless fun with the paper statue at work now. :-)
He also took me out for a nice dinner last night at Crush 29 where I got artsy with a mirror picture.
And enjoyed my favorite flat bread trio plate with hummus, tabouleh, and garlic chutney.
With wine, a fabulous way to wrap up an insane week.
Besides rinsing them, I’ve been neglecting my kamut berry sprouts with the craziness and they’ve grown to the point of pushing the sprouting trays apart.
Can’t wait to use them in a salad today!
Most of my meals have been pretty plain during the busy days, smoothies and salads. But I did make a great simple sauteed tofu dish the other night that started out by sauteing chopped onion, chopped fresh rosemary, and minced garlic in a little Earth Balance.
Then adding chopped tofu and sauteing until golden.
I served it with a simple massaged kale salad for a fast and easy dinner.
And it was a delicious way to add flavor and texture to tofu fast.
Now I’m off for a long run to blow off a little steam!
