Hiking and Salad Simplicity

After a crazy week at work, we decided to escape to Table Mountain yesterday for a peaceful hike and a change of scenery. The blooming flowers were beautiful.

And there were plenty of tadpoles in the streams and ponds, a very health sign for spring to me.

Both hubby and I had a great time snapping pics.

And exploring the unique terrain of smoothed rocks.

Gorgeous waterfalls.

And colorful rock ledges.

It was hot, especially with hats and layers of sun protection gear, but a fun option for exercise and so peaceful at the top of the mountain hearing just birds and the breeze.

But it was also nice to get back home to relax with these two.

On the way home we stopped by Fresh & Easy for dinner and a few items to restock the kitchen. plus I grabbed a splurge food being hungry after the hike – Popchips and they’re addicting, especially the simple salt and pepper flavor.

I like that they clearly mark the vegan friendly chips and the flavors that come with dairy and other non-vegan ingredients, a lot like Trader Joe’s products and I always appreciate being able to locate clearly marked vegan products for faster shopping.

I was astounded when reading the label for Lay’s Baked BBQ chips that they not only contained milk, but also chicken! Eek!

After a long, dehydrating hike and snacking on chips, nuts, protein bars, all I wanted for dinner was a huge, hydrating salad.

With a glass of wine of course.

      True on the Lays, my sister brought a bag to a day event at Folsom Lake and I’m glad I read the label before grabbing a handful!
