Sniffling & Surviving

First of all, cheers! Have a glass of wine with me for making it through this much of the week!

After the last two days, that’s something to celebrate for me! Work is still nuts, more long days of doing way too much at once with new project after new project. I’m thankful we’re so busy, but struggling to not feel burned out! I’ve also been a wee bit sore from Sunday’s half marathon and dealing with an annoying cold. After so many weeks of stress, I’m surprised I didn’t come down with one sooner and thankful I wasn’t sick for the race.

Last night was a late night at work, then running errands after. Since I was running by a Whole Foods, why not grab dinner from the salad bar?

Not cheap and totally lazy, but much appreciated with a throbbing sinus headache. I added my own sprouts and nutritional yeast.

Something else not helping my cold is our weather, we’ve been getting rain and chilly wind the last two days! It’s sunny with some clouds one minute, then it’s down pouring the next.

Shadow wants nothing to do with it parking his lazy rear in bed all day barely finding the energy to lift his head and look annoyed that I was shoving a camera in his face again.

I did find energy to make a real dinner tonight while getting a break from needing a tissue every 2 seconds. Since I’ve been ignoring this head of cauliflower in the back of my fridge long enough, it was time to use it.

But I wasn’t feeling too creative, I blame sinus pressure. So I went with one of my favorites, Creamy Hemp Seed Casserole. It’s fast and simple to toss the ingredients into the Vita-Mix container while lightly steaming chopped cauliflower in the microwave.

Since it was just me for dinner tonight, I could have parked it in front of the TV, but went all fancy while I enjoyed the rain clouds relieved another busy day had passed.

For a raw vegan hemp sauce, it has a wonderfully creamy, smooth, and rich texture for me with just a little cayenne kick.

The sauce coats cauliflower beautifully reminding me of cheap, cheese covered veggies I’ve had as a kid.

But still sophisticated tasting with nulti flavor personalities.

I’ve had so much going on in my life the last couple of months that I somehow missed a new vegan website – California Vegan Restaurants. That changes now because they’re hosting a Sacramento Vegan Chef Challenge this month challenging Sac restaurants to offer more vegan dishes and vegans to get out there, try them, and write about them. Totally up my alley! I just gotta figure out hot to expand our dining out budget this month!

    the dressing on the veggies looks perfect and that’s one of your best dinner pics…the “scene is set” with the candle and placemats, I dig it!

    sorry you are sick. my immune system always crashes after i am running on adrenaline and super busy and/or a big physical challenge has passed, moving, a marathon, etc.

    get better soon!

    My body often collapse after training for something big. Almost like it knows it can. Plus, you’ve been super stressed. Looks like you’re taking good care of yourself with wine and yummy food :)

      So true, I think all the stress and lack of sleep finally got to me. Good thing I’m planning a relaxing weekend.

    Ugh, sorry to hear you’re sick. Me too, although some hard cider I had tonight seems to have made it better! (probably not a holistic health approved remedy, but I swear it helped)

      Being sick is not fun, it’s been awhile since I’ve had a cold this annoying and this week has just dragged because of it. Hard cider sounds wonderful to me, hope you feel better soon!
