Ah, what a laid back day of perfect weather. Hubby and I stayed home today and had a quiet day working on house projects and watching the game. Well he watched most of it, I buzzed around playing in the kitchen, catching up on laundry and getting into shopping trouble online. And dealing with a sick chihuahua who has been having, uh, intestinal issues today. So we’ve been on lots of walks and spending a lot of time in the backyard. Poor thing, I have no idea what she got into and hope a vet trip won’t be needed this week.
I’ve never been a huge football fan, or sports in general. Growing up, football games always meant my dad hogging the only TV for hours and me taking off to the park or my room to find other ways to entertain myself. When I lived in Florida, football was like a religion in our town and it meant me pretending to be into the game at office Super Bowl parties when I was more interested in winning the office pool. So it was nice not to have today centered around the game and the freedom to get other stuff done with the game on in the background.
After last night’s indulgence, I stuck to my green monster breakfast before hitting the gym. This one had Sun Warrior Protein Powder, chia seeds, kale, green cabbage, a carrot and my favorite smoothie add – frozen banana slices.
I’ve noticed that bananas always make smoothies so much creamier and richer really helping the texture and flavor. So whenever I’m at Costco, I always load on up their huge, cheap bags of bananas.
And stuff them in a paper bag to ripen faster. Then just peel them, slice and put in the freezer. Perfect for smoothies, banana soft serve and even oatmeal.
I just went with a light salad for lunch with creamy avocado dressing since I wanted to save room for a dessert/snack.
I was craving chocolate and found more almond milk pulp in my freezer and defrosted it in my Excalibur dehydrator to make more raw brownie balls.
But I didn’t follow a recipe, I just threw the pulp, cacao powder, lucuma powder, pitted dates, dried, shredded coconut and a pinch of salt into the food processor, processed to a dough texture and pulsed in some whole almonds for nut chunks.
Then I just rolled the “dough” into balls for raw brownie ball snackers. It was just a fun, spur-of-moment thing and I love throwing various ingredients into our food processor for experimenting. Next time I might add raisins, dried cherries, dried cranberries, etc. And I probably ate way too many of these. :-P
Since I wasn’t too starved for dinner, I had more salad with vegan baked beans. Good and it’s been ages since I’ve had that style of baked beans – they’re okay, but not my favorite. And even though I can eat just about any type of bean now without it affecting my insides, these did for some reason. TMI?
I’ve noticed different beans affect my digestion differently. For example pintos digest better than black. Also what they cook in can affect digestion. The brownie balls look good!
I’ve noticed that on black beans too, they tend to be a little harsher and require longer soaking for me.

Those cookies look really tasty. Almond pulp is pretty amazing. I didn’t get around to making almond milk this weekend, but I did make hemp milk (quicker, no straining!)
For some reason, my stomach is a tank when it comes to beans — though once I start sprouting beans, it will be interesting…
I do prefer hemp milk to almond milk because it’s faster and has more protein. But I still make almond milk occasionally for recipes and have fun with the pulp.
It took me awhile to adjust to beans, chickpeas and lentils have no affect on me now. But black beans can still be a little harsh and apparently canned baked beans.
Awwww, dog intestinal troubles are never good. I hope your girl feels better soon!!

All right, what did Lela eat this time? Too much Superbowl happenings? I had a wonderful appetizer yesterday, but I doubt I would see it on your site. It was sweet cocktail pickles wrapped in salami! You should try it. Now I have to go on a bike ride to burn off the horrible weekend calories!
Not sure, maybe she snacked on a weed during our last walk. Yeah, think I’ll pass on the salami. But I might be inspired to create a veganized version. :-)

So funny, I will only eat bananas when they are in the green/yellow stage. Ripe bananas, especially ones with brown spots give me the shudders – I have to make them into banana bread! I could never, ever eat one normally haha!
