Yeah, it’s Monday. But it was a good Monday for me because after a busy weekend of being on call for work, I got to pass the on call duties to a co-worker and enjoy my new freedom of not having to carry around an additional, bulky cell phone … for a couple of weeks until it’s my turn again. It was so nice going for a run after work with just one cell phone and in our perfect weather, I actually wore a short sleeved top for the run and loved every second of it. I wasn’t the only one, it seemed like half our neighborhood was outside trying making the most of the weather before the sun disappeared, I waved to a lot of fellow runners which is great!
I think spring fever is hitting our pets too, my dog, who seems to be feeling much better, was thrilled with her walks and reluctant to go back inside and our cats are even more bratty than usual. Nothing like attacking daddy after a long day at work!
After a two days of eating high-raw, I was craving something hot and protein loaded. So tonight’s theme ingredient is my favorite source of quick protein lately – tempeh! I love that this stuff is so cheap at Trader Joe’s, much cheaper than the equivalent amount of meat, and so fast and easy to prepare. I always pick up at least two packages on each trip to Trader Joe’s.
I cubed the tempeh up and sauteed it with chopped red onion, eggplant, green cabbage and zucchini.
While I threw together a marinara sauce in the Vita-Mix adding nutritional yeast and hemp seeds to make it more creamy.
Then poured it over the skillet mixture and simmered for about 20 minutes.
And dinner was served!
It was great with varying veggie textures and a creamy, rich flavor. The eggplant and cabbage went very well with the sauce and the I’m glad I charred the veggie mixture slightly before pouring the sauce on. Now I just need to remember to wear an apron when I get going in the kitchen!
I’m also master of making a mess of the floors, stove … well the entire kitchen. And hubby just spent a lot of time sterilizing it over the weekend. Sorry baby, I’ll clean it up – I promise. :-)
