There’s Always Salad

So glad Friday is almost here after this week, so much going on at work and being on call has been crazy, I’m fried so short post. When I got home from work, I was just feeling out-of-it, but thought I’d try another skillet socca to go with a huge raw salad, this time seasoned with lemon juice and dill.

But flipping it didn’t go so well.

Rats! It looked like it was ready to flip, the edges where crisp. But it’s not easy to scoop with a spatula being delicate and it seemed too awkward to do the plate trick. I actually ended up with a savory pancake-like patty with a mashed potatoes texture, not bad. The lemon dill flavor was great though, much flavorful compared to my last attempt. But another frustrating thing that didn’t go right, seems to be a theme for this week. At least I still had the huge salad for dinner I threw together.

I topped it with plenty of hemp seeds and a little dulse to make up for the socca loss.

Packed with avocado and veggies, it was filling enough.

To celebrate this week being almost over and blow off a little steam, I’m taking my updated workout play list for a run.

    i love the pic of you on the margin, hottie alert :)

    and the socca…just a random guess, could adding lemon and the acid have anything to do w/ it setting up and turning out? i know that in baking of any kind, the presence of an acid can set off the mix…

    and your comments to me, gosh having a little dog IS stop and smell the roses time, i have had several little dogs in my life.
    and yes,i am the 2x/day posting queen lately. trying to keep each post shorter. or if not shorter in pics, it’s shorter in words. i am liking it better. Thank you for always commenting, totally appreciated, but clearly, i know you have a life too !!!! :)

      I was wondering that about the socca, but I only added a drizzle of lemon juice and it was the oil that pooled on the top. But it could have been.

    That salad! It makes me hungry :) So…the socca didn’t work this time, but sounds like it was still yummy!

    Beautiful site girl!!! I am sorry to hear your Socca didn’t turn out as “whole” as you would have liked, but it still looks tasty! Lemon and dill sound wonderful with it!

    A huge salad is always a dinner of choice for me :)

    I have had the same issues with skillet socca so I tried using my electric waffle iron and it comes out perfect each time. If you have a waffle iron or griddler I highly recommend using it for socca.
    Salad looks great!
