Ah, what a relaxing day. Both hubby and I had today off and spent it at home before another possibly busy week. We didn’t need to go out and the weather was cold, foggy and wet all day, so why bother? It was great playing games, tackling projects, working out and eating. Like this lazy salad I made with chopped collard greens, zucchini ribbons, sauerkraut, carrots, leftover tempeh chunks, dulse and toasted sesame oil for lunch. Simple and it got the job done.
Then I cleaned, sorted and organized our pantry while hubby sweetly sterilized the fridge.
I also prepped for the week by getting dried chickpeas and black beans soaking in the fridge for weeknight dinners, mixing a fresh jar of chia seed gel for breakfast smoothies and started a new batch of kefir water.
I spent a lot of time playing my latest addiction, Plants vs. Zombies on my iPhone and against hubby on Xbox. I know, this game has been around for awhile and I’m late to the party – as usual. But what a blast and I love that plants are the best defense against a zombie apocalypse.
For dinner I threw together Lentil Quinoa Chili since I was craving something hot and hearty after an icky weathered day. But for this round, I used plain green lentils instead of French and black quinoa to switch things up a little.
The end result was still delicious and very filling.
And maybe 1, or 4, dough balls were consumed throughout the day.
What do you do to prep for meals during the week?
I love the dough balls…i need to make almond milk JUST so i can get pulp to make dough balls.

And so does that pantry re-organization. I just did it. And could do even more! I love the space i cleared out and how nice it feels!
The balls are addicting, very fudge-like. I found more almond pulp in my freezer to, guess what I’m doing with it? :-)
It felt great to throw out crap and clean shelves in our pantry. I only got about half done, so I have more to go too.
That’s my kind of “stay in” day! The lentil chili looks so comforting and delicious. I prepped a lot of foods for the week, too. The husband and I are cleansing so it’s a lot easier to have everything ready. The raw stuff I’ll make fresh but for cooked: red beans, brown rice, nutty rice porridge, quinoa, chickpeas (for humus), butternut squash soup and vegetable soup. All finished by 1:00 p.m so I was a couch potato after that :)
Yum, the nutty rice porridge sounds great. And pre-chopping butternut squash for the week is a great idea.
So glad that you were able to really relax today after the stressful week you had last week!
I still haven’t put plants versus zombies on my phone, so don’t worry– you aren’t the LAST one to the party! :-)

Whenever Ryan and I *stay in* we end up organizing, cleaning, food prepping or tackling a project so I can totally relate!
It feels great to clean up and declutter, I’ve got to pencil in more time to do it regularly especially since our kitchen is under so much use.

I love staying inside on cold, rainy days, cuddling and watching tv or just reading. Relaxing is a must.

As much as I hate doing it at the time, I LOVE the feeling of being organized at the end of a good cleaning session!
True, I love my place being organized and minimized which is why I’m always writing about de-cluttering. :-P But my fridge and pantry become disasters so quickly!

If you have an Xbox, try playing that version of Plants vs. Zombies with him, it’s pretty fun letting one player be the zombies. :-P
