I’m such a geek that I was almost late for work this morning trying to snap pictures of the full moon. I couldn’t help it, when I opened the back door to let the dog out and saw this, I had to grab the camera and try my luck at night time shooting.
Needless to say, I have a lot to learn! I tried a few shots with the telephoto lens before madly rushing to get ready, the shots almost look like daylight or like night time from a 50s movie. The moon was gorgeous, but my dog wasn’t impressed, she just wanted back inside from the cold.
After a day of more leftovers and snacking on nuts and fruit, I was in the mood for a light and fresh dinner and the simpler the better. I opted for my go to simple meal, a monster salad, but hit up Ani’s Raw Food Essentials for a new dressing to try. I selected her Lemon-Tahini dressing because it sounded wonderfully simple with only 3 ingredients mixed in a bowl.
For the entire salad recipe, Ani’s calls for matsuna, or Japanese mustard greens, and radishes which I certainly did not have in my fridge. But I did have romaine lettuce, carrots and zucchini for the salad – and that’s about it since I need to get to the market soon! I got a little creative with the zucchini slicing it like a fan before using a peeler to make thin, noodle-like strips that were delicate in texture and absorbed the salad dressing nicely.
The dressing was super easy to create, throw ingredients into a bowl and mix. Though it wasn’t too appetizing looking separating like a miso soup, it was a nice thin texture that coated the salad with flavor evenly.
To “beef” up the salad, I threw in a lot of hemp seeds and served.
The dressing is wonderful, I don’t think it needed the exotic greens because it did a wonderful job of jazzing up plain old romaine and zucchini. I was a little nervous after tasting it before pouring the dressing on because the lemon flavor and tang was very strong, but it was just the right amount of zing on the salad and a dressing I’ll be throwing together a lot in the future.
And I finally did it – created a Facebook page for The Raw Project. I know, took me long enough.
I have seen that recipe in Ani’s book but never made it…not a huge tahini fan. It’s fine, but i dont keep it on hand. And im surprised you dont keep japanese greens and radishes hanging out in your produce drawer. (kidding :))

I know on the greens, she does use a lot of exotic ingredients in that book that I have to compromise on especially during winter.

Thanks, there are tons of great dressings in Ani’s book, but many are paired with exotic salad ingredients. I’ll usually make the dressing to go on a simpler salad. :-)
