Rain, rain, go away… We’re on day 3 currently of solid rain and I’m over it. I’ve given up on having a good hair day and am seriously considering investing in rain boots now. What makes this more icky is it’s always dark and the house feels cold, so all I want to do is park myself in front of the fireplace and not go out. Yesterday we did manage a trip to Costco in the rain and weekend-before-Christmas traffic. I’ve needed to go for awhile, but have been putting it off because I always end up spending more than I want to and it’s always crowded with with people who could use a little training in handling the extra large carts. And hubby is even less of a fan of Costco when it’s crowded. But we prepared ourselves for the worst and headed in. It wasn’t nearly as bad as I expected, I even found a short checkout line which I can never do on regular, non-holiday shopping trips.
We loaded up on a lot of loot for the holidays like medjool dates for holiday desserts – not organic as I usually get, but I go through so many over the holidays that paying 4x the amount for organic at Whole Foods is too steep. That’s on my New Year’s “to do” list – find a cheaper source for organic dates online. Anyway, also two huge packs of bananas to ripen and freeze for banana ice “cream”, Costco is the cheapest place to score them. And grapes, spinach, a 10 lb. bag of organic carrots, nuts and lemons since I seem to go through loads of those too. This should hold me for a little bit. :-) Notice the rain drops of everything, it was down pouring sideways rain as we loaded the car – super fun.
My eats over the last couple of days have not been too exciting, mainly leftovers like this from my quinoa throw-together the other night.
For simple lunches to have for the next few relaxing days at home, I created a big batch of guacamole dressing for a big salad to last a couple of days.
Topped with hemp seeds and lunch is served.
For dinner, I baked a huge batch of Gena’s Carrot Fries with some artisan black lava salt I had that looked like little black bugs.
Served with the salad leftovers and some Veganaise for dipping.
Very tasty and the carrot fries are a very filling snack. They’re also probably a fun way to get kids to eat more carrots because they can easily be baked with a little pumpkin pie seasoning, coconut oil and sweetener.
Big surprise, the rain is still coming down and it’s very windy. Since I’m too much of a wuss to run in this, I’m trying to motivate myself to hit the home gym before heading out to check more items off my to do list. How’s the weather where you are? Hopefully better than here. :-)

That dressing is such a great idea! Lately I have been making my salads with hummus as the dressing…but I’m getting tired of it!! Looks like you have inspired my new go-to topper!! Thanks a bunch!!

and i am a huge vegenaise fan…but must have sugar + apple cider vinegar and whisked together otherwise it’s just too mayo-ey, even for me. and i love thick sauces
finding a cheaper source for org dates..you know azure standard does drop shipments. you have to research it in your area, it’s kinda a PITA…but i know ppl who swear by them. i have never looked into them but google it. there’s a blogger i know who swears by them and she has 5 or 6 kids and they are raw vegans and order like 50 lbs of dates. a month. type of thing :)

The raw instructor I’ve been to a few times has a cheaper source for organic dates, guess I need to pester her through FB about it. :-)

It went really well with the fries. I got a gift set last year of gourmet salts that I’m still having fun with.
