I’m around, really. Just had a hectic couple of weeks that are settling down now. We had a great trip to Disneyland last week for Ron’s birthday. We drove instead of flying this time and were pretty wiped when we arrived at the hotel and opted to have dinner at Puesto Anaheim since it was in the hotel. We started with a couple of margaritas.
Then chips and salsa and two veganized taco plates to share, mushroom tacos and seasonal veggie tacos that were both great.
The next day we headed to Disneyland for the day where we started with the Soy Chorizo Country Breakfast Burrito from Galactic Grill. It’s loaded with vegan egg and cheese and was delicious! Ron still talks about it, so we may need to figure out how to re-create it at home.
Then to Star Wars: Galaxy’s Edge to ride Rise of the Resistance.
It lived up to the hype for sure for being an awesome experience and a surprisingly long ride with multiple adventures and missions in it – so cool. After we went on to more rides including Space Mountain and got Dole Whip for a treat.
After getting in more rides, we headed to Ronto Roasters to try the Ronto-less Garden Wrap vegan option that I’ve heard a lot of great things about and it did not disappoint! The Plant-based Gochujang Spread is tangy and kicky pairing perfectly with the kimchi slaw.
After the long day of walking and rides, we had a the vegan sesame ginger noodles at Alien Pizza Planet before catching Matterhorn Bobsleds for a last night ride. Then taking in the night scenes on Main Street before heading back to the hotel to rest for day 2.
Day 2 was at Disney California Adventure where we started with breakfast from Pym’s Test Kitchen of the Impossible Spoonful – pasta with Impossible meatballs and vegan parmesan that was delicious.
Then onto Pixar Pier to ride the Incredicoaster and it did not disappoint either! We moved on getting in as many rides as we could handle and explore the park.
And try some of the great drinks around the park for hydration breaks between rides.
By late afternoon we were pretty done after two long theme park days in a row and got in all the attractions on our list, so we had a simple dinner from Award Wieners of the Plant-based Philly Dog which was delicious.
After resting the next day, we headed out searching for vegan brunch and found great options at Aunt Yese’s Home Cooking. Ron got the Vegan Torta and the Vegan Pancakes for me loaded with blueberries.
It was such a treat and great location. There are a lot of vegan dining restaurants around Disneyland in Anaheim, too many for us to get to after trying to get to the large number of vegan options in the parks. But we opted to travel a bit farther to Redondo Beach to Pura Vita for a special birthday dinner for Ron.
It’s been on our dining bucket list for awhile and it was divine. We started with the Arancini appetizer, then the Carbonara and Black Magic Pizza to share. Then finished with the Pistachio Gelato.
Everything was amazing, but the Carbonara really stood out.
We wrapped up just in time to catch the sunset on the beach making a perfect way to wrap up the trip.
It was the first road trip in our Tesla which I was a little nervous about, but we had no issues supercharging along the way and the hotel had plenty of chargers in the parking garage making it fun.
It was such a great trip making it tough to return back to work after. But given us motivation to plan our next fun trip soon!

What a fun trip! I’ve never been to Disneyland and now I feel like I’m really missing out. I’d totally go for the food and drinks alone.

Wow! I can’t believe how many wonderful vegans meals you were able to find. I’m not always that lucky when I travel. However, I am also restricted bc I’m gluten-free. Sounds like a wonderful trip!
