I think I am still recovering from spring forward and a busy week at work because it’s been a lazy weekend and somewhat lazy week of eats with leftovers such as multiple servings of a tempeh curry stir fried rice dish. And another simple sweet and sour tempeh and rice dish.

Yeah, I batch cooked a lot of rice for the week and found a fabulous deal on tempeh at Grocery Outlet. But there were more exciting eats like the kicky nachos from Vegan Circus Food Truck since it was at a local brewery on the way home from work.

And a tasty falafel wrap with tahini sauce from a local Lebanese restaurant with co-workers.
I am still cleaning out Grocery Outlet deals from our freezer and sautéed Like Meat’s Like Grilled Chick’n with brown rice, veggies, and some Miyoko’s Liquid Mozz for a creamy treat that came out great.

There was also Mock Curry Chicken from Pho Vegan Asian Cuisine for a fun Friday lunch.

And more Omni Foods Vegan Fish pan fried with Cauliflower for a simple dinner. Ron made air-fried Beyond Sausage with steamed cabbage and air fried potatoes and carrots for St. Patrick’s Day dinner which came out great.
Now I am motivating myself for another week at work and hoping it’s a great week for everyone starting with the list.
Have not recovered from Daylight Savings! But the food in this post looks awesome, starting with the cauliflower. I can’t wait for them to be in season again for sure!
It gets tougher with age and I think I’m eagerly looking forward to ending Daylight Savings. Agreed on cauliflower, we’ll add it to our garden this year!
Oh those nachos look bomb AF! I crave nachos like that all the time. Why can’t more people do it right with all the toppings? I guess I just need to make them for myself more often. Thanks for tonight’s dinner inspiration!

The mock curry chicken sounds interesting. I have never seen vegan fish around here. I think you may have more vegan variety in California than Florida. Everything looks really good!
