I’m here and playing catchup after a fun, long holiday weekend of food, family and projects. We did get our tree up which I love, but thinking about adding our bubble lights because I’m obsessed with them even though they are not exactly eco-friendly compared to our new changing LED lights.
Thanksgiving was great and we ate so many leftovers for days after. We had a Field Roast Celebration Roast with plenty of Tofurky Gravy, vegan mashed potatoes, vegan green bean casserole, roasted veggies, and the Apple Cinnamon Streusel Pie from Sugar Plum Vegan.
I tried to keep it healthier around the decadent eating and leftovers with salad, simple veggie sauté’s, and tofu veggie dishes from a great local noodle place for lunch one day.
Ron made a fun dish of processed tofu and flour air fried vegan “meat” balls one night that were great with wing sauce served with Brussels sprouts.
And there was more Brussels sprouts with vegan mac n’ cheese with added veggies.
We also stepped out to Pushkin’s for vegan sandwiches, a local Thai Restaurant for vegan tofu dishes, and had vegan tacos at another family gathering.
In the colder weather I have been craving hearty and comforting potato sauté’s and stews. I used Franklin Farms Vegan Seitan Cubes in a hearty potato stew that came out great on a cold, rainy evening.
I also got the Vegan Wonton Soup from Pho Vegan Asian Cuisine for lunch one day which is such a winter comfort food.
Ron is a huge fan of burger and fries from Amy’s Drive Thru, so we try to meet there once a week for a work lunch. I have been ordering lots of interesting combos each time and this week it was a small cup of lentil soup with vegan broccoli mac n’ cheese which was a good combo, tasty while not being too filling.
Friday night we stayed in with vegan Blackbird Vegan Pizzas, I customized my Margherita pizza with added artichoke hearts, pineapple, black olives, and vegan parm for an interesting combo.
Wow this weekend flew by too fast, but it was productive and we have time off over Christmas to look forward to. So back to the grind tomorrow for hopefully a good week starting with the list.
