Fall is a gorgeous season here, I could never get tired of looking at these trees.
And enjoying hearty stews and one pot dishes in colder temps, such as a potato and black bean stew, spinach-heavy tofu stir fry, and another simple potato and kidney bean stew this week.
There has also been vegan mac n’ cheese with minced broccoli and veggies mixed in. And steamed spaghetti squash with soy curls and broccoli stir fried in kicky General Tso’s sauce.
Vegan Circus food truck was near work one day, so I stopped by for their Circus Nachos for a splurge dinner one evening. And had The Rachel Salad at Amy’s Drive Thru for lunch one day with miso dressing.
A couple of months back, I ordered the Juicy Marbles Plant-Based Bone-In Ribs and finally received then this week. They weren’t cheap, but it was a curious splurge and treat for Ron. They are very realistic looking, it’s a bit eerie. Ron air-fried them with potatoes and basted with BBQ sauce.
The “bone” is also edible which is very odd. Just look at how realistic they look which is crazy for a short list of ingredients.
And they were delicious, the “meat” was moist, stringy, and fell off the “bone” maybe like slow cooked BBQ and I suspect some would not be able to tell the difference from real ribs – eek. The “bone” is edible, but not something I’d recommend eating – it’s overly chewy, tough, and does not have much flavor. But the “meat” was wonderful and very filling, two ribs was more than enough. Who knows when they’ll be for sale again, but I recommend ordering them if you’re looking for a realistic rib experience.
Boo on another weekend ending, it was a long week last week at work and getting back to the grind after a fun packed few days in Las Vegas. But it’s a short week ahead and I am still wrapping my head around Thanksgiving being less than a week ahead. Hope everyone has a great Thanksgiving week starting with the list.

The mac n cheese with broccoli looks so good and the spaghetti squash. Your leaves are still so pretty, our are all gone and had to be raked. Sorry I’ve been MIA, two months of bronchitis have done me in, yikes! Everyone is so sick here with colds and flu, crazy! Hope you are doing better than in our neck of the woods!

Those ribs are wild! I’ve been so curious about the brand ever since they launched their revolutionary steaks. I hope they become more accessible (and affordable) in the future, since I’d love to try them too.
