It’s has been a rollercoaster of a week recovering from the ablation procedure, fearing the procedure was not a success, and dealing with medication adjustments that I will be stuck with for the next 3 months hoping things settle down and I won’t need to go through the procedure again. We’ll see! I have been trying ease back into exercise this weekend and it has been tough. Hopefully a better week ahead!
There has been some fun, I went to a paint and sip party with my sisters and mom where my pumpkin painting came out a bit too stylized, lol.
There has also been some good eats. I have been trying to eat lighter and healthier through all of this which is not easy during Vegan Chef Challenge month and feeling emotional. But there has been simple rice and tempeh stir fries, delicious veggie tacos from a local taqueria before the paint party, veggie wrap from Zest Kitchen, and homemade tempeh and potato stew for dinner tonight that will make great lunch leftovers.
Another simple rice and green bean stir fry, another wrap from Zest Kitchen, more Konscious Foods Vegan California Roll Sushi which is fabulous. And simple lunches for work of brown rice, steamed sweet potato, and peas.
It is Sacramento Vegan Chef Challenge this month, so we have been trying to get out to try some of the menus starting with The Paisley Café. I got the White Bean and Kale soup in a bread bowl and Ron got the Monte Cristo sandwich which was insanely large and filling.
We also got to Pho Fresh to try the Mushroom “Squid” Ring Tower appetizer and the Lemongrass Rice Aroma dish with out-of-this-world sweet and smoky eggplant and delicious vegan shrimp. We also got the Mi Quang Noodles, yellow turmeric noodles topped with mock shrimp and mock chicken and flavored broth for drizzling over it.
Everything was amazing, it’s been a good week of eats and some fun around the anxiety, doctor’s appointments, and frustration. I am hoping for a better week ahead for all of us starting with the list.

I’m so glad you’re still able to enjoy the Sacramento Vegan Chef Challenge! Those dishes already look absolutely fantastic, as always. I’m so envious and wish I could join you.
