Hints of fall are showing up here and I’m still not sure I’m ready for summer to end. It has been a good summer with mild weather compared to ones in the past. I consider September summer still here, but neighbors are already starting with the Halloween decorations while I’m craving more outdoor fun time. We had that last weekend for Labor Day getting out on the paddleboard with family and friends on the river. It was packed, but smooth and fun.
Some eats this week included a simple turmeric soy curl and noodle soup with veggies, a go to comfort dish for me.
The Vegan Poke Bowl from Zest Kitchen again with co-workers for lunch and a simple soy curl ginger sesame stir fry using more zucchini and yellow squash from our garden.
There was also a tangy salad with chopped tempeh, massaged kale, sprouts, and sauerkraut with Trader Joe’s Vegan Creamy Dill Dressing that was delicious.
Vegan Circus Food Truck was near my work one evening, so I stopped by to grab dinner on the way home – Organic Circus Nachos for me and Big Top Burger for Ron. Both were excellent, the chips for the nachos had a daring level of kick paired with plenty of jalapeño slices.
And I have a new ingredient to try and get creative with – Organic Naked PB from Naked Nutrition.
It’s simply organic powdered peanut butter with no added sugar, salt, oil, etc. making it versatile for using in sweet and savory recipes. I’m just getting started with it by making a simple blended stir fry sauce with a scoop of Naked PB, garlic, fresh ginger, tahini, tamari, and a carrot that came out delicious on a soy curl dish.
It tasted much better than it looked, haha. I am looking forward to adding it to smoothies and other creations to share soon.
I’m a little sad the weekend is over looking at a busy week ahead and hoping for a good week for everyone starting with the list.

I’m intrigued by all the recipes you’ve made. I’ve never tried soy curls- got to add it to my list to try. I wish we had a vegan food truck.. and the PB powder looks like a brand I need to switch too. The organic one I use has added sugar. Thanks.

Thanks and soy curls are great, a pantry stable here that’s easy to prepare fast in wok, air fryer, etc. Yes on Naked PB, it’s great in smoothies too.
