This could be an interesting week for me as I reflect on a year ago. This week marked the 1 year anniversary of me leaving my last job after over 15 years due to facing serious burnout. This week will also be the 1 year anniversary of Miko passing which is still so painful to think about and how sad the last year has felt without him. And the 1 year anniversary at my current job, so much change in a short amount of time and the changes kept coming this year which is another post. I put together photos of happier memories to celebrate all of our fur family and just really had a tough time deciding which pictures to use and make sure they are all represented, I need more frames to do that.
We are planning to add more fur family, I want to badly. It’s been a year adapting to a new job and grieving. We thought it would be better to travel a bit before welcoming more fur family, but still thinking that over and deciding the right time.
There has been a lot of salad this week with multiple large spinach salads at home, The Rachel Salad with Miso dressing from Amy’s Drive Thru and the Chipotle Black Bean Quinoa salad from Zest Kitchen.
Grab and go options at Trader Joe’s thanks to busy days at work and a Trader Joe’s very close.
And easy dinner at home utilizing Chickapea Vegan Mac with added peas for veggies.
Also more and more zucchini and squash to eat up from the garden! I am getting burned out on Patty Pan Squash now, there is tons of it coming from our garden!
And more squash in simple tofu stir fries, haha. Also vegan Thai takeout Friday.
Another weekend flew by too fast, boo. Hopefully looking at a good week ahead starting with this list:

Aw, I love the photo frame and compilation of happy memories. It’s definitely a lot to process; there’s no rush. Take your time to celebrate, grieve, and plan for the future as it so moves you.
I was passing through SFO this morning and was sorely tempted to make a pit stop at Amy’s! I definitely thought of you!
