Wow, July is almost over, summer might be flying by too fast. But we did have some summer fun last weekend heading out on a boat all day with family on Bullards Bar Reservoir where the water is a gorgeous green and perfect temp for swimming and water sports.
We packed sandwiches for the day using a new plant based deli slice find, Unreal Deli Fine Vegan Meats.
Loaded with lettuce, sprouts, vegan cheese, and mustard – it was a treat since I rarely make sandwiches like that and paired nicely with chips, fruit, and watermelon seltzer. It was a great day getting out and having fun with family before heading back to the grind and usual week night eats of zucchini and soy curl stir fries, salad, and more zucchini stir fries since we’re still loaded with it from the garden.
Friday we got back out to Pho Vegan Asian Cuisine for lunch to celebrate making it through the week.
And Ron picked up a loaded veggie pizza with vegan cheese from Papa Murphy’s for dinner with added vegan pepperoni.
Saturday I decided to have a kiddie meal to eat up a cheap find at Grocery Outlet – Dr. Praeger’s Chick’n Littles kids nuggets, lol.
But I did have them with salad, so that’s grown up, right? They were simple to cook and nicely crispy with a hearty, “meaty” texture. And something I would totally eat again.
Today I went out with my mom and sisters to a place I’ve been meaning to get to for awhile, but it’s a bit of a drive – El Cantaro Vegan Taqueria.
The menu is huge and it’s tough to decide because it all looks good! We started with chips and guacamole. There is a large taco menu where you can order a plate with 3 tacos of choice for a fun variety which one of my sisters and I did. We also tried enchiladas and “steak” street tacos.
Everything was amazing, especially the Ensenada “Fish” Taco that I will be going back for soon I think!
And back at Sunday night looking at a busy week ahead. It will be fine, productive and fun – right? Yeah. Hoping you have a great week and let’s start it with the list.

El Cantaro is the absolute BEST! Truly bucket list-worthy, destination dining. I’m still hoping I’ll have time to go back on one of my next visit. I remember really loving the pozole especially.

Summer is flying by but it looks like you are having tons of fun! We put the boat in last night with the kids and went tubing. I’m too old to tube! Such yummy food in this post!

It is, not sure I am ready for it to be over. I think I might be too old for the tube too, we did it and felt it in my arms for awhile after!
