It was back to the grind for a short work week after a fun getaway to Lake Tahoe for a long weekend of hiking, eating, and getting outdoor time. The waterfalls and hiking were just gorgeous, Tahoe is my summertime happy place.
The amount of snow still around was wild after a crazy winter, people still skiing and snowboarding in shorts for the 4th of July.
There was also a lot of great eating and drinking such as this lovely veganized pizza and beer from Fireside Pizza Co.
And more snow still at the Shirley Canyon trailhead, just lovely. Ron also packed a lot of vegan goodies to have for trails and breakfasts, so sweet.
The views from The Villages at Palisades made it feel like an exotic international getaway instead of a short drive into Tahoe. And there were many great eats such as great vegan curry with tofu from Auld Dubliner Tahoe, Thai Chili Tacos from Fat Cat Bar & Grill, and Buffalo Cauliflower and Thai Cabbage salad from Rocker.
Before we left, I checked the garden to see a few tiny zucchinis starting, but when we got back they were nearly the size of large watermelons! Ugh, still trying to figure out how to use the plentiful amounts of squash we have stock piled now. I have been eating a lot of roasted and sautéed zucchini and yellow squash and can’t keep up.
And I have a lot of patty pan squash growing to use as well which was good chopped, sliced, and simmered with tofu, onion, and spinach in a kicky garlic turmeric sauce.
Hey look, more yellow squash in a tempeh stir fry, lol. Also Kung Pao Tofu from Pho Vegan Asian Cuisine and spicy Thai Takeout.

It sounds like Tahoe was a wonderful place for a getaway. It’s nice that you were able to spend time there.
A couple of ideas for your excess squashes: bake some zucchini bread and bring them to your work for your coworkers to enjoy.

Donate fresh squash to a homeless shelter or local food pantry(ones that accept perishable items). There are always people who have food insecurities, especially those who don’t have access to fresh produce.
