No lovely outdoor pics in this post, it’s too hot! Instead I headed back to the gym this morning for the first time since the pandemic. I needed a change and new challenge from my home workout routine and going outside is not an option.
It was nice to mix things up and guess I will be adding this to the weekend routine for awhile. There were more routine eats too with large salads and more yellow squash and zucchini stir fries.
I tried this Chickapea Vegan Mac with added peas for dinner one evening for a fun meal. Not super decadent, but tasty and fun.
We also tried a new splurge from Amy’s Drive Thru – Vegan Chili Cheese Fries and they were a tasty treat! And nice that it was not a crazy portion, just perfect for a little splurge.
And we stepped out for more kicky vegan Thai this week.
Since we spent more time indoors with the triple-digit heat this weekend, Ron dug out and cleaned our deep fryer to play with and use up more zucchini.
I used veggie broth as the liquid and a seasoned blend of panko bread crumbs with vegan parmesan while making a mess of the kitchen.
The end result was delicious, crispy and crunchy. The zucchini takes on a creamy texture inside the batter and the fried sticks were great chopped and added to a salad.
Ron also used it to fry a Field Roast Stadium Dog to make a chili cheeze dog with plant based chili and Daiya cheddar and gave a thumbs up for the texture. I kept it simple with turmeric tempeh noodle soup… with more zucchini, lol.
Back to the grind tomorrow and avoiding this heat! Let’s start the with with a positive list!

Oh man, fried zucchini is something magical alright! I’m totally craving it now but truth be told, I could happily eat that every day.
