Birthday Eats for the List

I had my birthday this week and it’s still crazy hot here. But I took a day off to have a 3 day weekend for fun even if that’s enjoying the AC inside and binge watching corny 80s movies. I did get out for a delicious tofu curry dish from a local noodle restaurant and Chana Wrap from Zest Kitchen for work lunches.

Ron also made excellent beans and rice one evening.

We are still using up tons from our garden, more simple summer squash stir fries and salads to use up tomatoes.

I added a delicious lemon cucumber from our garden to a salad and Ron made this wonderful Lemon & Dill Roasted Zucchini Dip to use up more zucchini.

I also sautéed yellow squash with tempeh, green beans, and glorious amounts of garlic and lemon for a simple meal. Ron deep fried sage leaves to add to Sprouts Vegan Ravioli topped with Daiya Parmesan for a gourmet vegan treat.

We also went Pushkin’s for a birthday lunch and started with dessert.

Ron got the Vegan Po Boy sandwich and me the Kale Maitake Caesar Salad.

Both were great, but the salad was more of a decadent treat of fried mushrooms, vegan cheese, tofu, and creamy dressing with some greens and artichoke hearts added. Not complaining, it was a splurge day, haha.

Then we headed to Veg Midtown to start with refreshing cocktails and Momo Cauliflower – cauliflower fritters with pineapple and truffle buffalo sauce.

Then onto the Truffle Mac and The Boiga – Impossible Burger with BBQ ranch and smoked gouda on a pretzel bun.

All amazing and very filling, we had to take leftovers home. But I need to get back to Veg again soon! It was a great birthday with more fun planned for tomorrow. I hope you’re having a great weekend and inspired by the list.

    Happy belated birthday once again! Looks like you celebrated the right way; with all sorts of delicious food! It’s so good to see that Pushkin’s is still around and making amazing food. I was lucky enough to visit twice and loved it both times.
