Another weekend flew by, bummer. There was some outdoor time walking and visiting grazing sheep.
I have been eating so much zucchini and yellow squash that I might be getting a little tired of it! We are getting tons from our garden and I need to get more creative with it. But simply chopped, sautéed with vegan butter, salt and pepper worked well with vegan ribs.
The was also Sweet Potato tacos from Zest Kitchen and excellent beans and rice Ron made.
I found these Plant Based Sweet Chili Chicken Quesadilla by Tattooed Chef at Grocery Outlet and they made a great, simple work lunch to microwave. For not being huge, the size was just right – filling and fast.
There was also the Impossible Taco Salad from Mendocino Farms, a tofu stir fry using more yellow squash, and a large salad with baby corn, and artichoke hearts.
We also tried another new find, Daiya Flatbread Meatless Italian Sausage Style Crumbles, Roasted Pepper & Kale. It was delicious with a crunchy thin crust and plenty of toppings while still being light.
Yesterday I had lunch with family where we got takeout from Loving Hut and lots of it for great leftovers!
And more zucchini and yellow squash in a simple tofu stir fry and simple tempeh veggie turmeric soup, I have a lot of leftovers for work! And hopefully a great workweek ahead before a holiday weekend, but let’s have a little more weekend with the list.

Amazing that you are getting food from your garden already! That’s great! Sheep. So cute. We have friends who raise lambs for fun and want us to meet their babies. They do farm trips for kids and bring the lambs to various schools to make $$. It’s nice!
