It has been a weird week starting with our fridge dying last Sunday and by the time we discovered it, there was a lot of food loss. Ugh! It was only 7 years old, but not under warranty and apparently a common issue for the brand and generation’s compressors. After confirming the costs and options with a appliance repair tech, we ended up replacing it and had an odd week of eats while waiting for the replacement fridge living out of a cooler. And a busy week at work, so lots of convenience eats and enjoying outdoor time when I could.
There is a Trader Joe’s close to my work making it very easy to grab lunches and they have some great ready to eat vegan options for cheap like the Peanut Udon Noodle Salad and Creamy Hummus & Vegetable Wrap below.
And this Spicy Lentil Wrap with Spicy Tahini Sauce is another filling and great go to for $5.
There was also this Sweet Earth General Tso’s Tofu frozen meal for dinner one night that was pretty tasty and kicky.
I took the opportunity to do a little pantry clean out this week having this Wicked Foods Spicy Smoky Dreamy Mac for lunch that has been sitting in the panty for awhile. While it was good and simple to prepare with hot water, it was a bit too savory and spicy for me.
There was also a simple potato turmeric sauté to use up potatoes and frozen peas.
And this colorful and hearty Healthy Choice Power Bowls frozen meal another night that had a beautiful blend of healthy ingredients. It needed a little more salt and would be a great vehicle for hot sauce.
There was also takeout from Pho Vegan Asian Cuisine and we stepped out for vegan Thai dishes again on Friday to celebrate making it through the week.
And Amy’s Drive Thru for lunch one day since I am still working through a buildup of free burgers on my rewards program, lol. That is becoming our Friday tradition since Ron is a fan of their vegan burgers.
We finally have a working fridge again from a hopefully better brand, but who knows! Ugh. Hopefully heading into a better week for everyone starting with the list.

Hey Christine, I’m sorry about your fridge, that’s the worst! And you eat healthy so probably had lots of $$ pricey food in the fridge. We have the same problem, lots of good food, like fruit and veggies in the fridge so when it goes, bleh! Using a cooler would be hard, too!

Oh no! Having a fridge go out is among one of my worst nightmares. I’m so sorry for your loss. 7 years is MUCH too short; I’d write an angry letter to the manufacturer, if only for some sort of catharsis…

Yes and agreed, we’re furious. There was a class action lawsuit against the manufacturer, but we do not qualify since ours did not fail soon enough. Ugh.
