Warm Weather Eats for the List

Happy Mother’s Day to all the mothers out there. I saw cute geese and duck families celebrating on some outdoor time this weekend and enjoyed sunshine after a lot of rain last weekend. But the weather has been interesting here, raining and in the 60s last weekend, sunny and 90s this weekend. I feel like we haven’t been able to gradually acclimate to the warm temps and just sweating this weekend! Oh well, summer it is now.

It’s been a busy week at work with some nice overtime, but also a tasty week with spicy mock chicken from Pho Vegan Asian Cuisine, more simple tofu stir fries, and kale and cabbage stir fries with chopped LightLife Tenders.

I found this Wicked Kitchen Wicked Sticky Teriyaki Sauce to try on a simple summer squash tofu stir fry and it was delicious, spicy, but not too spicy, and the right amount of sweet.

Now that we have an Amy’s Drive Thru nicely close to my work, Ron and I typically go once a week and I discovered I have been building up a lot of points and free food in the Amy’s Drive Thru app. I utilized some of them this week getting 3 free vegan burgers and a nice chunk off the entire order. If you go to Amy’s Drive Thru a lot, get the app and use it to check in each time! There was also great spicy vegan Thai Friday night to celebrate getting through a busy week.

In my pre-vegan days way, way back, I used to enjoy canned Italian Wedding Soup. So I was excited to find Upton’s Naturals Vegan Italian Wedding Soup. Very similar to what I remember with a more gourmet texture of heartier pasta and organically shaped chunks of vegan meat for a fresher, homemade appeal.

Last night I threw together a simple potato, chickpea, turmeric sauté in a wok which will make great work lunch leftovers. Today my sister and I took my mom to a Japanese Bistro from lunch on the patio where I had veggie tempura for the vegan option, then craved a hearty salad for dinner tonight after so much fried decadence, ha.

Back at Sunday and another busy week ahead. Time for a vacation soon I think! But hopefully a good week ahead for everyone starting with the list:

  • Vegan protein sources.
  • Replace meat with these vegan ingredients.
  • Vegan cream cheese recipe.
  • Alaska Airlines taking vegan options seriously.
  • Recipe inspiration for collard greens.

    Happy belated Mother’s Day!

    I didn’t even know that Amy’s had a loyalty program. I wish I was close enough to take advantage; that’s such a great deal.

      Yes, more points build up when you order through the app or check in at locations. I’m still working through the free burgers!
