It’s been a full and interesting weekend including lots more rain, storms, and hail yesterday after an oddly cold and wet week. Not complaining knowing summer triple digit heat will be here soon enough! Yesterday was a busy day with multiple events including a family birthday party where the vegan options were pasta salad, vegan eggplant parmesan, and fruit – not bad!
I may be recovering a bit from too much wine, oops. We also celebrated Cinco De Mayo a bit this week with nachos from Zest Kitchen for lunch one day and Ron surprised me with homemade vegan chorizo and potato tacos Friday.
Other simple eats include more turmeric soy curl soup because it’s been a cold week! Simple summer squash and tofu stir fry and a loaded chickpea salad with vegan bleu cheese dressing.
I also created another interesting salad tonight using cheap finds from Grocery Outlet – Revolu Green Plant Based Burgers for chopped protein, Saverne Organic Kraut, and Sabra Hummus to a hummus-based dressing.
The flavor and texture of the burgers is good, very “meaty” and made a great add to a salad, but possibly a little salty on their own.
Boo on the weekend being over, I could use some more down time and need to plan some time off soon. Especially since it will be a busy week ahead, but hopefully a good week for me and you too! Starting with the list:
