Happy Memorial Day weekend. Been a relaxing one so far and we’re planning a casual get together here tomorrow I am looking forward to. I’m still getting back into the swing of things after replacing our fridge and the food in it, have not been feeling very inspired in the kitchen this week. So simple eats such as Trader Joe’s Vegan Chili with corn chips and stepping out for vegan Thai curry dishes never gets old.
We have a visitor in the house again – cat sitting my sister’s cat for a couple of weeks and she has made herself at home on her couch and attacking Ron’s shoes.
I made myself a splurge dinner one evening with Trader Joe’s Vegan Spinach & Cashew Ravioli, Vegan Shredded Parmesan Cheese Alternative, and frozen spinach for a simple, but tasty dinner.
The vegan parmesan melts nicely paring perfectly for creamy and savory comfort.
There has also been simple tempeh stir fries with veggies.
And Friday lunch at Amy’s Drive Thru. There was also pizza night trying Blackbird Vegan Pizzas.
The pizzas were delicious, great crust texture not being too thick or thin and great with added olives and artichoke hearts on the Kale & Mushroom pizza.
Of course there was more salad, I made a huge kale salad for work lunch leftovers.
And tried a new product from Trader Joe’s, Truffley Soy sauce, on a simple tofu stir fry. The sauce has a strong truffle smell.. A little bit goes a long way for flavor. But I was not a huge fan for the flavors, it’s a bit too strong for a stir fry and needs to be used lightly as an accent.
