Wow, another weekend flew by too fast. It was a good weekend, spring has finally arrived with warm temps and sunshine, perfect for getting some outdoor time.
We went to a celebration of life gathering where the only vegan option was salad with vinaigrette, but it was a vibrant plate with fresh veggies and a good excuse to enjoy a light lunch.
I have not been great getting creative this week using batch cooked rice for simple stir-fried rice dishes and simple spinach salad and lots of leftovers.
But there was a delicious Chana Bean Wrap from Zest Kitchen and simple stir fried noodles with a kicky tomato peanut sauce.
Today I volunteered at the Sacramento Earth Day festival for the SacTown Veg Society booth which was fun to get back to after not going since the pandemic. It’s a fun tradition welcoming warm spring temps and enjoying outdoor time. There are lots of eco-friendly booths, fun goodies to by, a large electric vehicle display, and only vegan food served from vendors.
I ended up getting the spring roll plate from Vegan Plate and made a mess of it before remembering to snap a pic, oops. And I ended up staying longer to help pack up the booth, but it was a nice to hang out with other vegans, answer questions, and brainstorm fun future events. Now back to preparing for the work week ahead, I hope this list is a good start to it.

Happy Earth Day! It was absolutely the perfect weekend for it too. So glad you got to enjoy the event. I wish I could have made it since I’m in SF, but was here for a wedding that day.
