Happy Easter. We’re having a low key dinner at my Dad’s today that I am making multiple recipes for. And we have a house guest this week, my sister’s cat while they’re on vacation.
She seems to be pretty happy with us finding her favorite sleeping spots, getting treats, and aggressively begging for attention.
I’ve been in a strange place with eats this week keeping things simple at home, but eating out a lot too in out oddly cold and wet weather this year.
There has been simple rice stir fries, curry sweet potato and tempeh stir fries, cabbage tofu stir fries, and a kicky ginger peanut soy curl stir fry using a sauce of blended peanut butter, carrot, ginger, garlic, tamari, and vinegar.
We also went out for Ron’s birthday to a local German Biergarten that a had vegan options. The cucumber dill salad and Beyond Meat sausage plate were very good.
There was also a trip to Amy’s Drive Thru for vegan salad, fries, and vegan Amy burger with grilled onions.
And a trip to Zest Kitchen for Sweet Potato Tacos and Orange Vanilla Cheesecake which was divine. Of course more spicy vegan Thai dishes, it’s been a good week of eats. And hopefully a good week ahead for everyone starting with the list.
