The rain came back this weekend which is great, we still need all we can get and I’ve been able to get some outdoor time around it taking in geese making the most of little lakes and greenery.
It has been a crazy and interesting week where I have been lacking creativity and eating lots of leftovers to keep it simple. But there was a delicious spaghetti squash dish with vegan grounds, marinara sauce, and spinach for a simple one pot dinner.
And a chickpea, cauliflower, turmeric sauté utilizing batch cooked brown rice.
A fun vegan taco bar night prepared by Ron where I made a messy, loaded taco salad.
Lots of turmeric dishes this week, guess I was in a warming mood. But it also paired well with another chickpea and rice sauté and potato, soy curl, and spinach sauté. I might be in a turmeric rut, haha.
We had a bit more decadent fun this morning with a vegan brunch featuring multiple types of Beyond Meat sausage, hash browns, and scrambled Just Egg that was a rare treat.
And Ron created a gorgeous taco plate using leftover Impossible grounds and Daiya Cheddar.
I did get out a little trying to tasty Lebanese restaurant for lunch with a co-worker for a very filling falafel wrap plate. And Ron and I headed to IKEA yesterday for a simple plate of Veggie Balls and veggies to fuel up before wandering the showroom for inspiration.
Not a crazy exciting weekend, but it was nice to decompress and catch up on house projects after a busy week while avoiding the rain. Now I am looking forward to a productive week ahead and hope the list is a good start for you too.

The spaghetti squash looks devine! We love IKEA, too and their food court. But the kids hate it. I think looking at cool home decor on a Saturday is a fun family activity but they all seem to disagree. Bummer
