I have been enjoying mostly dry weather this week after repeated winter storms, but still lots of full ponds and pretty clouds on outdoor walks.
And had a nice lunch on Old Town Sacramento today to celebrate a special family birthday, eat vegan enchiladas, and take in how full the rivers still are currently!
Last weekend we stepped out to Burger Lounge for vegan burgers, I got the ancient grains veggie patty burger with vegan cheese while Ron the Impossible burger – both were great and we need to get there more.
It has been an eventful work week, so simple eats with lunch leftovers of salad, tofu stir fries, simple turmeric lentil noodle soup, and fun marinara tofu veggie sauté.
Friday, after a long day, we stepped out for a later vegan Thai dinner that hit the spot with live music.
And headed into downtown last night for vegan burgers in the very cool underground Empress Tavern before taking in a comedy show.
They only had a vegan Impossible Burger on the menu and only had one vegan burger bun left, which I’m glad they checked and told us. So we each had half protein style and have traditional burgers with extra fries, haha.
But it was excellent, great beer, and such a fun and unique underground cave atmosphere located under the Crest Theater. And it’s been a great weekend of getting out and enjoying that it was not raining! Feeling refreshed to head into a busy work week hopefully! And I hope this list is an encouraging start to your week.

Such fun and delicious outings! It’s so nice that almost all places have a Beyond or Impossible option, and it’s even better if they still offer a housemade patty. Funny that it’s becoming increasingly rare now.
Thank you so much for linking to my recipe, too! :)

Very true and I am a fan of grain\veggie burgers, but Impossible is much easier I guess.

There is nothing like the taste of the Impossible burger. I too was so happy to see them offered in so many restaurants. However, as much as I love them, I have stopped eating them due to the really high fat content. All of your food photos look really good! I’m seeing a lot more plant-based choices on menus!! yay!!

Very true, but not the healthiest option.
