It is starting to feel like fall this weekend, we got wind, rain, cool temps, and no wildfire smoke. So exiting we picked up pumpkins at Trader Joe’s and opened the windows for that wonderful fresh rain smell.
Still eating like a queen for work lunches at Zest Kitchen and Pho Vegan Asian Cuisine as my schedule is a bit crazy with my new job training and traveling to multiple buildings to pack lunches. The new Poke Bowl from Zest Kitchen is wildly colorful and delicious with savory watermelon for the “fish”. I never get tired of the quinoa wrap, tacos, or Korean Noodles.
And trying to eat cheaply at home too with tofu veggie stir fries and interesting curry veggie sautés, we are still getting a lot of zucchini from the garden to use up.
And found many interesting goodies from Trader Joe’s this weekend including Vegan Korean Beefless Bulgogi that Ron really liked pan fried with spicy pepper sauce and served with brown rice, the “beef” flavor and texture was eerily good. I went simple with rice noodles and veggies. And we tried the veggie tofu rolls with kicky Korean sauce, yum.
Things are going here, still adjusting to the new job and empty house missing Miko a lot and working through the grief. Happy fall is coming and enjoying who I work with for the new job and new learning opportunities. Working to get back into a healthier eating grove as I work through changes which will happen eventually. And I signed up to volunteer for an endurance race next weekend to help a friend. Not excited about getting up very early on a Saturday, but fascinated to see runners taking on a 48 hour running challenge (!!!) even though that’s not something I see myself doing. Should be fun! Hopefully this list is fun for you.
