Happy Memorial Day! It’s been a long and lazy weekend here with a house guest. We are watching my sister’s cat while they have a weekend getaway and this kitty is packed with personality!
She had no problem getting used to our house and demanding her usual routine and is exploring our home office finding new things to sit on or knock over as I type this. Miko is not interested in her at all and has been happy to growl when she gets too close to his bed.
It’s been an emotionally exhausting week as I ponder a big decision and work through an extensive paperwork nightmare to start it. Eats have been lacking inspiration this with so much going on. Lentil pasta with marinara and veggies. Loaded salad using the first cucumber from our garden and blender basil hemp seed dressing. Also simple stir fry using Lightlife Chorizo sausage I found for cheap at Grocery Outlet.
Soy curl sauté using more summer squash from our garden and a turmeric potato sauté.
There has been not-so-healthy convenience foods too like Alpha Foods Plant-Based Veggie Breakfast Burrito for lunch and Clo-Clo’s Vegan Mediterranean Pizza.
It’s been a week as I wrestle with a big decision and hope it all works out and I have more details to come. Until then, I hope everyone is having a great Memorial Day and week starting with the list.

I’m blown away that the cat and dog are not having it out with each other! It’s been 3 years running that my 2 dachshunds and cat cannot find peace with each other. It’s worse than the kids! It’s nice of you to watch your sisters cat though!
Me too! Especially since the cat is used to having it out with a much bigger dog at home and tried multiple times to engage Miko. He gets lets out a low growl when the cat got too close, that’s it.
