Bummer on losing an hour this weekend, I am over daylight savings, such a pointless pain in the rear! Thank you for the kind words last week on Miko, he is still here and seemingly stable on his medications for now which we’re thankful for. He has been enjoying his long walks and came with us to a family gathering last night for some socializing and spent most of the evening in our laps or eating.
I took Friday off of work for a long weekend and take a dent out of my nearly maxed out vacation time, and planned to spend the day with my sister. Since gas prices are crazy here, I decided to gamble and take my EV even though it would require charging it for the trip back home. That ended up being a miss-adventure when I discovered the hard way that fast charging stations I planned to use threw an error on my car and I ended up leaving it at a slower charging station instead while we had lunch at Loving Hut Vegan restaurant.
Then I ended up having to work a bit remotely due to issues coming up since work is so busy now. Even though I really enjoyed the day, it’s was a reminder that not much seems to be going as planned lately no matter what I do. But also to slow down and work through challenges instead of melting down which has been something I have been fighting hard that last few weeks. And being thankful for what is going okay.
Again, it was not the healthiest week of eats which I am working on. There was Thai takeout, simple BBQ tofu stir fries, salad, and mung bean protein pasta with chickpea marinara.
A delicious lunch at Loving Hut Friday with my sister was a nice break from stressing at work, I think I need to take more Fridays off. We started with the crispy rolls, then shared the Joy Chow Fun noodle dish and Tofu Eggplant Curry – all was excellent with plenty of leftovers.
There was also a vegan Sofritas burrito bowl from Chipotle, simple noodle miso soup, and takeout from Pho Vegan Cuisine for a family party.
And back to me trying to look forward to the work week ahead and prepare for it today with shopping and laundry. I hope you have a great week starting with the list.

How much is gas there? I heard from another Californian they paid $9.50/gal – ours is going up but it’s at around $4.59 atm.

Aw, thank you! Currently between $5.60 – 5.90 a gallon, not cheap. Thankfully we don’t use much of it.

While I do love having sunlight later in the day, I’m still totally screwed up over the time difference. One hour doesn’t seem like much on paper, but tell that to my brain! Oof… I sure wish I had some of these incredible foods to ease my pain. I REALLY miss Loving Hut. For all their branches across the world, it’s downright shocking that they don’t have a location in Austin.

Yes, when will this madness end? It gets tougher with age! Aw, there should be a Loving Hut in Austin! I do not get to ours near enough, such great eats.
