As you may have heard, we are getting just a little bit of rain this weekend – it has pretty much been downpouring with lots of wind since last night and we’ve spent the entire day indoors. Not complaining, it’s much needed! Miko has been very frustrated about no walks today and not even wanting to step out on the covered patio to use his fake grass patch because the wind has been so strong. But he has a new comfy hoodie for the winter that we think he likes!
We plan to take him on more outdoor adventures in the cooler weather and figured he needed something a little more warm for outdoor dining and winter walks.
The Sacramento Vegan Chef Challenge is going strong, we stepped out to Chicago’s Pizza with a Twist last weekend for their offerings and found an impressive regular vegan menu with creative options, but opted for the Garlic Breadsticks with Vegan White Sauce and Vegan Supreme Pizza – both awesome and made great leftovers for the week. But the Supreme Pizza was probably the best vegan pizza we’ve tried dining out!
Other eats during this crazy week included salad with black beans and homemade blended hemp seed nacho dressing. And simple tofu stir fry using frozen breaded tofu I found cheap at Grocery Outlet and a delicious vegan grilled cheese sandwich and tomato soup Ron whipped up one night after a crazy day.
We also stepped out to Zest Kitchen for their Vegan Chef Challenge Offerings – a gorgeous Autumn Harvest Bowl with winter squash, kale, Brussels sprouts, pumpkin seeds, and dried cranberries to celebrate fall. And the kicky Chipotle Tacos and Pumpkin Cheesecake for a delicious treat!
There has also been local Thai tofu curry dishes and lots of time cuddling Miko inside with the chilly weather and rain.
Last night we had a great family gathering at my sister’s house where we brought the Korean Noodle party tray from Pho Vegan Asian Cuisine for the vegan option as a one-pot meal everyone liked and had a decadent fusion plate of Korean Noodles with tofu, vegan pesto noodles with vegan parm, and roasted Brussels sprouts.
It’s been a great week of eats, but a challenging week at work that I am trying to prepare myself to deal with further this week. And Miko has his cardiology appointment this week that I am anxious for and really hoping it goes well. He is still coughing, but has a steady breathing rate, so we’ll be looking to adjust his medication and maybe add something for the cough. I hope you have a great week ahead and find inspiration in the list.

Hi! I’ve been thinking about you and your family – hoping you weren’t experiencing the awful weather and complications from the Bomb Cyclones, Flooding, Mudslides, Tornadoes, Snow, etc. All of your ‘eats’ look great! I love seeing the menus and layouts/floor plans of restaurants in other areas! So neat! Miko is adorable! LOVE the new outfit!

I can’t believe the weather reports I’ve been hearing! Glad that the Bay Area is getting some much-needed rain, but I wish it didn’t have to be such a catastrophic all-or-nothing situation. Hope you’re staying safe out there!

That vegan pizza looks delicious, I could eat that entire pizza myself and I’m not even joking though! And. The. Rain. It’s been pouring for over a week here, I honestly think the rain will never stop. Dachshunds hate rain so they pee in the house. Yuck!
