I am sad this weekend is over already looking at another busy work week, but it’s been a great weekend of cooler temps and reminder that fall is near. Miko has been such a sweet little buddy and doing okay, he still seems to be coughing more, but breathing rate seems to be okay. I was able to make another echocardiogram appointment for me with a new veterinary cardiologist, but it’s not until November and we’re doing what we can to keep him stable and happy until we can get a better update of how he is doing.
With better air quality and cooler weather, I have finally gotten out for more runs and was really sad to see a large pond completely dried up. I have been running that trail for years and have seem the pond at varying levels during dryer seasons, but never gone, so this was a scary sight.
We have been getting a lot of butternut squashes from the garden and they are delicious with Miyoko’s Oat Milk Garlic Parm butter!
Other eats this week have been steamed spaghetti squash with beans, marinara, and veggies for a simple one pot meal. Seitan stir fries, vegan takeout from Chipotle for a hurried work lunch, and simple curry potato and chickpea sauté.
More salad, watermelon, tofu spaghetti squash marinara, and Daiya pizza for a simple Friday night at home.
But we did get out last night to Pho Fresh which was wonderful! I adore that place and their vegan options, but it’s a bit of a drive. We both got delicious vegan noodle dishes that hit the spot.
And I am doing a little better, still feeling like we’re just hanging in there and getting through it with so much going on. Work has been very busy which has been tough being short staffed and next week will continue with ongoing projects. I’ve been working hard to make things better and more efficient, but we just can’t get the staffing we need in the office and feeling it. It’s tough not knowing when that will get better. But trying to make the best of it and go into weeks with a positive outlook. Hopefully the list is a positive start for you!

Those noodles look absolutely killer! I’m seriously craving it now… It’s been ages since I had a big bowlful of pho. The heat finally broke here today, too (only 86!) so I could definitely go for that now.
