Hello, it’s been a quiet and hot weekend here with eerie full moon shots looking very bright on Friday and creepy and red last night from smoke.
We’ve been keeping cool inside with Miko who has been such a sweet, cuddly guy.
He seems to be doing okay on all of his heart medications which he is taking 4 times a day now and we’ve been careful to protect him from the heat and other stressors, monitor his breathing rate, and make medications adjustments when needed. I feel like a nurse organizing his medications for the week and taking inventory to order refills!
We have also been enjoying our garden and getting tons of summer squash from it currently for stir fries and salads.
And more simple salads using Trader Joe’s broccoli slaw, tofu and tempeh sauté’s using more squash, and stepped out for vegan Thai.
And, oh yeah, it was my birthday this week and there has been some eating out with family including Yard House with my dad for a veganized chicken sandwich using Gardein and vegan cheese – nice that they can veganize a lot of menu items. And takeout from Zest Kitchen with a veggie wrap and kale salad.
And met my sisters and mom at Il Fornaio for a nice lunch of vegan bruschetta and pasta. It’s been such a nice week and weekend, I am working hard to motivate myself for the work week ahead. Hope you have a great week and enjoy the list!
