You’ve probably heard about the heat wave in the north west and this has been a brutally hot weekend! 113 degrees yesterday and 109 today with it not cooling down for the night. I’m feeling a little cooped up keeping Miko company inside and away from the heat, I think the poor guy is getting a little stir crazy too.
We have found corn on the cob is a great distraction project for him – he loves carrying them around the house and meticulously nibbling all the corn he can while making a mess. Luckily it’s easy to clean up and keeps him happy for a bit. It’s been an odd short week with a lot going on and me lacking drive to get creative in the kitchen, so more simple eats.
Kale salad with chilled fruit, summer squash stir fry, curry chickpea sweet potato sauté, and more kale salad because it’s hot!
We made it back to Peet’s Coffee for the Everything Plant-Based Breakfast sandwich which is addictingly good! Also stepped out for spicy Thai tofu dishes, I made sweet blueberry breakfast quinoa, and another simple summer squash tofu stir fry.
And now I’m fighting the Sunday blues looking at a busy work week ahead, we have a lot going on and struggling to get in more help for it in these interesting times. I hope you’re doing well and have a great week. Let’s start it with this list.

Corn cobs are great busy work for pups! Much better (and safer) than bones of course.
