Hello and I hope you had a good week. It’s been an interesting week in the news and I am feeling optimistic about the near future of this pandemic, but trying not to be too optimistic. It’s been another quiet weekend at home, we stayed in all day yesterday tackling house projects, trying new classes on Apple Fitness+, and deep cleaning, planning furniture changes, and watching TV. I am getting excited about our new dinning set whenever it will arrive – sometime in May I think. It will be the focal point to redoing more furniture that has probably been long overdue.
As you probably have heard over and over in the news, it’s been a year since the pandemic lockdown started. Feels like it’s been 5 years! I went back to this post just before it started where we had a full day of company and fun starting at my nephews game with family, lunch out with family and friends, then a huge family gathering that night. The thought of taking so many risks with family and friends now is crazy! And what a blur it has been since hiring a new team member during the pandemic, trying to balance high workloads with limited office time, missing co-workers, friends, and family, and just a crazy yet numbing roller coaster.
Trying to get outdoors more, enjoying nature on runs and backyard blooms.
I washed all of Miko’s beds and blankets yesterday and he has a huge collection around the house! He was very happy to snuggle in them when fresh and warm out of the dryer.
Eats this week have been on the simpler side, lots of salads, stir fries, and leftovers for lunch. But a curry pasta veggie soup I threw together came out great.
And there was protein black bean pasta from Trader Joe’s with marinara sauce and added spinach.
Vegan Thai takeout Friday night supporting our favorite local place and roasted butternut squash with sautéed spicy BBQ tempeh and air fried garlic asparagus tonight.
And here we are back an Sunday night preparing for another work week. Boo. But at least I hope the list will be an encouraging start to it.

I do know the feeling well…. I just got my first shot on Friday! It’s so exciting. Suddenly, life feels so much more possible again. I can actually think about travel, and book events, and, I don’t know, hugging my parents? It’s simply amazing. I can’t wait until we all get there.

It’s crazy that it’s been a year since we were told that we needed to stay home for two weeks to flatten the curve. My husband is still working from home! Like you, I’m cautiously optimistic.

It is! I am back in the office full time, but so many co-workers are still working remotely and I miss them and going out to eat.

Yes! There are so many reasons to have hope. Vaccines are rolling out, today is the first day of spring, and much more goodness on the way. I can feel it!

I love your lists, and I have to give a special thumbs-up to the Just Egg bites. The second I find them, I’m buying them. Their premade egg squares (in the frozen section) are the best. I like to make a breakfast sandwich with them using sandwich thins, Treeline herb chevre, sliced tomato, and Trader Joe’s roasted red pepper spread. If you happen to have some Lightlife Gimme Lean sausage in the house, it’s a good addition.
Weirdly, more than cheese, eggs as a breakfast dish, were difficult for me to give up as a vegan. Just Egg kind of saved the day for me.
