It is tough to get back to the grind after such a fun week in Southern California! The heavy workload and ongoing projects were still waiting at work and I miss being able to walk to the beach and just hang out. I found it was tough to disconnect from work during the time off with so much going on and trying to avoid a mountain of emails when I returned. But it was great to get back home to Ron and this little guy.
Back to work and other projects at home like working on our garden as the weather inches towards warming up. And fun outdoor walks, our neighbors added a food dispenser for people to feed their goats when passing by and it has been very popular!
And back to house planning. A finish we ordered for our new dining room table is no longer an option, so we headed back yesterday to pick new finishes and ended up pivoting to lighter options that I think would look better with our floor and I’m excited about that.
I have been trying to get back to simple and healthy eats, but it is a struggle with work stress and everything else going on. Simple tofu stir fries, curry potato sautés and a fun salad using seitan cubes I found for a good price from Grocery Outlet.
More simple dishes here, going through lots of beans and tofu this week and Thai takeout Friday because that is our thing lately.
And last night I made a fun vegan pizza using up a vegan pizza crust with smoked vegan cheese, pizza sauce, kale, and pineapple for a delicious combo.
Today will be about running, laundry, and shopping to prepare for another week. Ah, I miss vacation. But I hope you’re doing okay and this list is a good start to your week.

That is one good-looking pizza! I haven’t seen that brand out here, but hopefully it will make it into more markets soon. It’s pretty rare to find a cauliflower crust that’s vegan… And worth eating, quite frankly.
