How are you? Hanging in there I hope. It’s official here, Christmas will just be us, no family gatherings with cases still out of control. We are trying to make the best of the situation and focusing on what we have to be thankful for. I know Miko will be thankful to have us at home, he is loving warm, cozy time.
I am loving enjoying outdoor time when I can and night runs to take in the elaborate decorations in our neighborhood. Including one neighbor’s dark sense of humor leaving their Halloween skeleton out – seems appropriate for 2020, haha.
Work is still very busy with big, ongoing projects which I am thankful for. But I have been keeping eats pretty simple with salads, sautés, stir fries, and other one-pot dishes I can utilize leftovers for simple lunches.
Ron made a large batch of beans and rice with vegan sausage, there has been more vegan Thai takeout, and simple veggie tofu and TVP sautés.
We did get to Grocery Outlet yesterday and have a freezer full of cheap Impossible Burgers to show for it, but the vegan cheese and protein deals did not disappoint!
Other than that, it has been a quiet week mostly at home. I am looking forward to getting back out into the world at some point and remaining positive about that happening soon. Still hard to believe Christmas is next week! At the same time, we’re not stressing about it and I’m trying to use this time to relax and throw out pressures that would have been getting to me for a typical Christmas. Instead we’re playing games, watching more movies and shows, and getting out for leisurely outdoor walks and runs. And finding lots of kitchen inspiration fun in this week’s list!
